Friday 5
Good Morning! Hows the week been treating you? Yesterday at work I had a ROLLER COASTER of emotions.
First.. well I was just tired, but thats expected when you get up at 2:20am.. ugh. Then I was simply elated.
Then disgruntled.
Then confused.
Then angry. [No I didn't roar, I usually just meow.. to myself.]

Then nervous.
However, with everything that happened yesterday- it happens for a reason. I’m excited to tell you about what’s been going on soon.. so stay tuned
I’ll tell you about the confused, angry and disgruntled part, but the other’s you’ll just have to wait.. there will be another post on my new endevours soon
Remember this post? Well, take a look at # 8. I had one of the worst days I can think of with one of the… ‘ahem’… Doctors at work. Let’s call them “Dr. X”. I love working together, but when you talk to me like I’m an idiot, like I’ve done everything wrong, then yes- I’m going to get upset, really upset actually. Passive aggressive people are mind boggling to me. I’m not really sure what they enjoy about making others feel like absolute dirt, but clearly it makes them feel superior. And well, I still feel like dirt. Thanks.
It’s not about tattling, it’s not about displaying your authority in front of my peers, it’s not about who’s right or wrong.. its about patient care. I wish I could just brush it off, knowing I’m not the only target of this behavior. But, there’s no way I can ever look at “Dr.X” the same. Too bad.
That’s old news now.. I’m onto more exciting things.. like breakfast. Oatmeal, Bob’s mighty tasty hot cereal, chia seeds, vanilla soy milk, flax, and a scoop of peanut butter
O.K. maybe I’m over it.
Courtney and I went to the gym bright {even though it was totally dark} and early today.. we were done before the sun even came up! Kinda nice getting the workout done before the day gets started. I still have a trainer ride later today, but… at least the gym is done

What I’m reading..
I’m finishing up the last of the Twilight series. I know… STILL?!! but, I’ve been a little pre-occupied and haven’t had much time for reading, but now it’s time to finish up.. and perhaps start the Hunger Games so I can see the movie!
What I’m loving..
My new hair. I went with the Ombre look.. subtle, and reddish [To match my freckles and fair skin]
I’ll try and have JB take a picture soon! (i’m awful with self portraits)
What I’m eating..
I finally tried it. Have you? It’s actually really good, it’s almost fluffy.. and so much creamier than I thought it could ever be.. MmMmMm

What I’m playing..
I still can’t get enough of the Draw something game.. but JB just made me download this new game.. Scramble with friends? ever played? It’s interesting.. I’m not the best at it, but it’s still fun!

Homemade low-cal Creamy Balsamic dressing
Who wants to play fetch? ME!!
Ever go to grab something and realize you ran out? Well, that happened to me. I ran out of salad dressing- BOOO!!!
But, Google came to the rescue. I found this recipe for a creamy balsamic dressing I just had to try
Here’s what you need:
- 1/4 c. balsamic vinegar
- 1 T. low sodium soy sauce
- 1 1/2 T. honey
- 3 T. nonfat plain greek yogurt
- 1 T. EVOO
- dash of pepper
Baked “Chinese” Chicken Bites
Monday. Monday.. Back to work! [for most of you] It was like a Saturday for me though, after working all weekend I slept like a log. After a few errands, and making some granola bars I decided to go for a run!
I haven’t really been running much, just focusing on biking lately, but I had the urge to run and it felt great. After the run out in the WIND I met Courtney at the gym for our lifting date
Dinner tonight was simple.. found this recipe from Delish.com- Decided on just making the chicken without the sauce, and they came out awesome. We had a ‘finger foods’ kinda dinner. Served these tender bites with sweet potato fries and a side salad
You need:
- 3/4-1Lb Boneless, skinless chicken breast- cut into chunks
- 1/3 c. panko bread crumbs
- 1 T. sesame seeds
- 1 egg
- 1/8 t. salt
- 1/2 t 5 spice chinese spice
toast the panko and sesame seeds in a pan until it’s golden brown..
meanwhile beat the egg with the spice and salt, then add in the chicken..
Once the panko and sesame is toasted, just dredge the chicken in the mixture and place onto a lined baking sheet (I used my small stoneware pan)
Bake for 12-15 minutes at 450..

eat up!
Tomorrow looks like another chilly day, so I might bundle up and ride outside or… a trainer ride? Hmmm

Hope you had a good week.. and enjoyed the weather at least. I still can’t get over how nice it’s been! But the weekend it’s looking so nice around here…. perhaps that’s making it a little easier to go to work all weekend

But I’ll try and keep on it, I’ve got a lot of things I’ve been meaning to post, I just haven’t been able to get to it!

What I’m drinking.. hot french vanilla. can’t go wrong. But ya know- I’ve been really enjoying my new Keurig machine! It makes my 2:30 am mornings a little more enjoyable

What I’m watching.. Yes. It’s true. I’m not a voter- I just like to watch
What I’m playing.. OBVIOUSLY the new game Draw Something. I’m not much of an artist.. but how can you be when you’re trying to draw on your phone? That’s the best part! Probably one of the funniest games I’ve played so far. Are you any good?
What I’m loving.. have you tried these chips?! They are to die for.. so much flavor and CRUNCH! My favorite chip got even better.. give them a whirl from Trader Joe’s!
What I’m wearing.. Peachy nail polish. Spring is here! Nothing like accessorizing with nail polish
