banana protein muffins
I was forced given a few of these muffins by Courtney a while ago. They’re full of protein and good stuff. Oh and JB loved them too. Perfect for before or after a work out. Or anytime really
They are awesome!
I finally made them today with the old banana in the fridge. Because what else was I suppose to do with it? I made a 1/2 batch today using my mini muffin tins and a few regular size ones, But i’m sure I’ll be making more soon. So for a full batch here’s what you do..
Pre-heat your oven to 325.
Mix together the following:
- 2 whole eggs
- 2 egg whites
- 1/3 cup skim or soy milk
- 1 1/2 cups very ripe banana
- 1 cup honey
- 3 T. canola oil
- 3 T. unsweetened apple sauce
- 3/4 t. salt
- 1/2 t. cream of tartar
- 1 t. cinnamon
- 2 cups whole wheat flour
- 3 scoops vanilla whey protein powder
- 3/4 t. baking soda
- 2 t. baking powder
- 1/4 cup chopped walnuts (optional)
pour into muffin tins, and bake for 15-18 minutes or until a toothpick comes out clean.
