TGIF

Hope you had a great week, and have something fun planned for this weekend. JB and I are on the hunt for a bike rack for his new whip tonight. Going to check out Rack Attack in Framingham, anyone ever been there? Maybe I can convince him to stop at the mall too… HMMMM
Saturday we hope to squeeze in a bike ride at some point between the rain we are suppose to get. We also have a birthday party to go to for Graham Saturday afternoon
aaaaannnd Sunday I am working. One more week until we are going up for Maine for our mini vacation, I can’t wait! We went to OOB about 6 years ago one summer, and again a few years later, so this year we decided last minute to take a long weekend and go up there. It’s not greatest place to visit, or the most beautiful place to be, but we like it, people watching at it’s prime.
I’ve been browsing Etsy the past couple days.. and came across this necklace. I am going to get another chain for it I think, but I absolutely loved it cute hu?
Here’s how my day started..

chug water. sip coffee. mow greek yogurt with flax… and GO!

I was suppose to race today.. but my Left knee has been acting up again. Ever since I weeded the garden on Thursday- I think I pulled my hamstring or something! So JB and I biked over to George St. to check out all the racers… Not gonna lie- I got jealous watching everyone race. Oh well. There’s always next year I guess :/

We hung around for a little bit, but it’s Sunday so you know what that means!!! getting lunches ready for the week, finishing up some cleaning and laundry, and Sunday dinner plans.
Tonight we made Fish Taco’s. Yep. They are gooooooood. Real good.
Here’s how you can make them. You need some Tilapia (seasoned and marinated for 30 min with a little EVOO, Chili powder, red pepper, lime juice, s&p), or another firm white fish. wrap it in tin foil and grill over direct heat for 8 min..

and some homemade guacamole, some grilled onions, fresh cilantro and some scallions, brown rice, tortillas or taco shells, and any toppings you like. I like using a little plain greek yogurt- instead of sour cream, some cheese and lettuce.

1, 2, 3.. Paella!
I told you I was going to make it.
We found Chorizo, and saffron at Wegmans, we had all the other ingredients at home, so all I needed was a recipe:
First- marintate the chicken, cover, and refrigerate-
- 1 T EVOO
- 1.5 teaspoons paprika
- 1 t dried oregano
- S&P to taste
- ~1/2 pound skinless, boneless chicken breasts, cut into 2 inch pieces
Second- Make saffron rice- Heat EVOO in a large skillet over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 40 minutes. (<– just cook rice according to directions, it may vary)
- 1 tablespoon olive oil
- 2 cloves garlic, crushed
- 1/2 t. crushed red pepper flakes
- 1 cup uncooked brown rice (**we used brown rice vs. white rice. All the recipes I found called for white rice, but we wanted to try brown)
- 1/2 pinch saffron threads
- 1/2 t. parsely
- 2 cups chicken stock
- 1 lemon, zested
Third- Cook meat and peppers- Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.1 tablespoon olive oil
- ~1/2 Spanish onion (white/yellow sweet), chopped
- ~1/2 red, green, & yellow bell pepper, cut in strips
- ~1/2 pound chorizo sausage (casing removed and crumbled or sliced thinly)
- ~1/2 pound shrimp, peeled and deveined
Fourth- mix it all up and enjoy
and there’s plenty for leftover’s for tomorrow

Bocado
After a hot bike yesterday, we were in need of a night out
Last night JB and I went on a double date with Matt and his girlfriend Claire. We went to this place in Worcester called BOCADO. Thanks Claire for choosing this spot because it was AWESOME! JB and I have looked at the menu as it gets rave reviews on YELP, however never made the trip. So I’m glad we went! It’s a spanish tapas bar and restaurant that offers a huge selection of food and drinks. We decided to go with the tapas experience for 4.
It was certainly enough. We all chose what we might like and tried a little bit of everything. According to YELP- their sangria is a must- so I had to try it, I went with the berry one- it was sweet

The fried goat cheese and almond saffron hummus were my favorite “starters”
Everything was sooooooo good.. and this isn’t even everything!
The mini kobe beef sliders were my favorite too! (mmmmm burgers)
Then came the big meal. We got the Meat Paella. I’ve never had paella, and it certianly won’t be my last either- it’s a combination of yellow rice, different meat including sausage, chicken, duck, pork and veggies- PERFECTION.
Oh- and we even got dessert with the whole meal. I wasn’t a huge fan of the flan- but the fried dough with chocolate dipping sauce was really good.. good enough JB grabbed one before I could get my picture in! (…what a sweet tooth)
I suggest you check out Bocado because You can taste flavors you may not be able to try anywhere else. I will definitely be going back here.. for those burgers and hummus

Homemade Frosty Paws
Ever heard of these?
Well with all this heat, Sly deserves some homemade frozen lovin’. I made these last night.. peanut butter frozen dog treats. They are so much cheaper than the market! We headed over to Target last night after JB and I went to scope out some cars at the Subaru dealership… yes. It’s true- he is finally getting a new car
It’s still in the works.. once it’s in the driveway I’ll show you
I already had honey at home so we picked up some plain yogurt, extra natural peanut butter, dixie cups and a couple more bananas. That’s all. To be honest after I made them- I thought to myself, why can’t I have one of these? They looked and smelt so good, kind of like my usual post workout smoothie really.
So all you have to do is blend together:
- one ripe banana
- 32 oz. Natural Plain Yogurt
- 3-4 T. Natural Peanut Butter
- 2 T. Honey
**Be sure to let your pup lick the peanut butter spoon**



pour them into either dixi cups, or styrofoam egg crates and freeze overnight.

Then to loosen them just let it soak in a little warm water, then pop in a big ziplock bag for easy pop n’ go treats. Pretty cool hu?
the dixi cups peel right off too.. so you can feed them to your dog or let them have the whole darn thing.
